3 eggs
1 teaspoon almond extract
1/4 cup agave syrup
1 teaspoon almond extract
1/4 cup agave syrup
3 ripe bananas, mashed
1/2 teaspoon vanilla bean paste
Notes / Directions
1. Preheat oven to 350 degrees F. Spray loaf pan with cooking spray.
2. Mix together almond flour, ground cinnamon, and baking soda in a bowl.
3. Beat two eggs in a bowl. Mix in almond extract, agave syrup, mashed bananas, and vanilla bean paste. Add banana mixture to almond flour mixture; mix until no dry areas are visible. Pour batter into the prepared loaf pan.
4. Bake banana bread in the preheated oven until brown and crisp around the edges, about 45 minutes.
***You can do many variations of this recipe. I have been told Pumpkin or Cranberry is good. I experimented the other night and took out all the sweet stuff and seasoned it with garlic and Italian seasonings and it was delicious with my spaghetti sauce.

I love me some banana bread and this is different than any recipe I've made. I will definitely have to try this! Don't worry, I'll use an egg substitute lol.
