In a vain attempt to look good (in general and while in Vegas) I have been staying pretty true to my Paleo plan. I use yams or sweet potatoes to help me stay on track and this week I discovered a new way to snack on my sweet potatoes. Fried sweet potato chips!! Eeek! Can you stand the goodness!
Can't get more simple than this!
Ingredients:
Sweet potato
Coconut oil
Sea salt
Directions:
Put 2-3 table spoons of coconut oil in a frying pan to heat.
Slice your sweet potato into thin rounds. The thinner the better, if you like crispy.
In a single layer place the sweet potatoes in the hot coconut oil. If they are thin enough it should only take a couple mins on each side to cook.
Place the chips on a paper towel to drain, sprinkle with sea salt & enjoy!
Chips, specifically tortilla chips are my downfall, but these crispy little gems have done quite well to satisfy my salty crunchy cravings.
