Paleo Chicken Salad

Alright folks, I promised you a yummy recipe and I am keeping my word. Better late than never J

I have been Paleo strong for 5 days now!! By no means is this a personal record, but considering my eating habits for the last 5 months it is pretty damn good! Just an FYI, in this short time period my workouts and performance have improved dramatically as well.

A key staple in my weekly meals has been Paleo Chicken Salad. I cannot take credit for this delish dish. A friend at my box made it for a potluck and I fell in love with it! I love when I can get my protein and fat into one dish! As always, remember that you can add to or change up this recipe to fit your taste buds! And don’t feel that you must be Paleo to enjoy it! Good food is good food J

This recipe is for a large batch of Chicken Salad that will easily last you a week, but you can easily make a smaller batch by simply cooking less chicken.
